    Prepare the Lamb

    Preheat your oven to 325°F (160°C). Season the lamb shoulder with salt and black pepper.

    Sear the Lamb

    In a large Dutch oven, heat olive oil over medium-high heat. Add the lamb shoulder and sear on all sides until browned, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, minced garlic, carrots, and celery. Sauté for about 5 minutes until softened.

    Combine Ingredients

    Stir in the harissa paste and cook for another minute. Then add the crushed tomatoes and broth, mixing well.

    Braise the Lamb

    Return the seared lamb shoulder to the pot. Cover and transfer to the oven. Braise for about 2.5 to 3 hours, or until the lamb is tender and falls apart easily.

    Finishing Touches

    Remove the pot from the oven. Take the lamb out and shred it using two forks. Return the shredded lamb to the sauce and stir to combine.
