    Prepare the Frites

    Peel and cut the potatoes into thin strips. Soak in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Cook the Frites

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, season with salt.

    Marinate the Steak

    In a bowl, combine za'atar, berbere, olive oil, salt, and black pepper. Rub this mixture all over the skirt steak and let it marinate for at least 30 minutes.

    Cook the Steak

    Heat a grill or cast-iron skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing against the grain.

    Prepare the Red Wine Jus

    In a saucepan, combine red wine and beef stock. Bring to a simmer and reduce the sauce by half. Stir in butter until melted and smooth.

    Slice the skirt steak and serve it over the frites, drizzled with red wine jus and topped with crumbled feta cheese.
