Shawarma-Spiced Prime Skirt Steak

    Prepare the Marinade

    In a bowl, mix olive oil, garlic powder, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper to create a marinade.

    Marinade the Steak

    Place the skirt steak in a resealable bag or shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

    Cook the Rice

    In a saucepan, combine the basmati rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

    Cook the Steak

    Preheat a grill or skillet over high heat. Remove the steak from the marinade and discard the leftover marinade. Cook the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Rest and Slice

    Remove the steak from the heat and let it rest for 5 minutes before slicing against the grain.

    Serve the sliced shawarma-spiced skirt steak over a bed of basmati rice. Accompany with house-made tzatziki or zhoug.
