Preheat your oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish and bake according to package instructions until golden brown. Remove from oven and set aside to cool.

In a medium saucepan, whisk together granulated sugar, flour, and water over medium heat. Gradually stir in fresh lemon juice and lemon zest. Cook, stirring constantly until the mixture thickens and begins to bubble. Remove from heat.

Incorporate Egg Yolks
In a separate bowl, lightly beat the egg yolks. Slowly add about 1 cup of the hot lemon mixture to the yolks while whisking to temper them. Then pour the yolk mixture back into the saucepan with the remaining lemon mixture. Cook for an additional 2 minutes, stirring constantly. Remove from heat and add butter, stirring until melted. Pour the lemon filling into the baked pie crust.

Spread the meringue over the lemon filling, ensuring it touches the crust to prevent shrinking. Use a spatula to create peaks in the meringue.
