    Prepare the Dough

    In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until foamy. In a large bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

    Prepare the Filling

    While the dough rises, heat a pan over medium heat and sauté the cremini mushrooms until browned and tender. Season with salt and pepper to taste. Remove from heat and let cool.

    Shape the Khachapuri

    Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into two equal portions. Roll each portion into an oval shape on a floured surface. Place on a baking sheet lined with parchment paper.

    Add the Filling

    Spread half of the sautéed mushrooms and half of the graviera cheese onto each dough oval, leaving a border. Create a shallow well in the center of the cheese and crack an egg into each well.

    Bake

    Bake in the preheated oven for 15-20 minutes, or until the dough is golden brown and the egg is cooked to your liking.

    Garnish and Serve

    Remove from the oven and sprinkle with chopped green onions. Serve hot, allowing diners to mix the egg and cheese together before enjoying.
