    Prepare the Yogurt Base

    In a large bowl, mix Greek yogurt, lemon juice, lemon zest, and honey or maple syrup until well combined. Taste and adjust sweetness if necessary.

    Freeze the Yogurt Mixture

    Transfer the yogurt mixture to a freezer-safe container and freeze for at least 4 hours or until firm.

    Make the Meringue

    While the yogurt is freezing, preheat your oven to 200°F (93°C). In a large mixing bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add sugar, continuing to beat until stiff peaks form.

    Bake the Meringue

    Spoon the meringue onto a parchment-lined baking sheet and shape it into a round or individual meringue nests. Bake in the preheated oven for 1 hour, then turn off the oven and let the meringue cool completely inside.

    Scoop the frozen lemon yogurt into bowls, top with meringue, and serve immediately.
