Preparation

Prepare Stracciatella Cheese

1. Make the Cheese Mixture

In a bowl, combine the fresh mozzarella cheese (cut into small pieces) with heavy cream and salt. Mix until creamy and well blended. Set aside.

Grill Peaches

2. Prepare and Grill Peaches

Preheat the grill to medium heat. Cut peaches in half and remove the pit. Brush the cut sides with olive oil and sprinkle with salt. Grill for about 3-4 minutes on each side until grill marks appear and peaches are tender.

Make Pistachio Pesto

In a food processor, combine pistachios, basil leaves, garlic, olive oil, Parmesan cheese, salt, and lemon juice. Blend until smooth, adjusting oil or water for desired consistency.

Assemble the Dish

On a plate, spoon some of the stracciatella cheese mixture. Top with grilled peach halves and drizzle with pistachio pesto. Serve immediately.
