Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable oil and mix until crumbly. Gradually add water, kneading the dough until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

Shape the Roti
After resting, divide the dough into equal portions (about 8). Roll each piece into a ball and flatten it with your palms. Use a rolling pin to roll out each ball into a thin circle, about 8-10 inches in diameter.

Cook the Roti
Heat a non-stick skillet over medium heat. Place the rolled-out roti on the skillet and cook for about 2-3 minutes on each side or until golden brown and slightly crispy. Brush with a little oil if desired.

Serve the roti warm with your favorite Thai curry or dipping sauce.
