Directions to Prepare Pla Yum Ma Mong

Prepare the Fish
Clean the whole red snapper thoroughly, removing any scales and innards. Pat the fish dry with paper towels.

Season the Fish
Rub the fish inside and out with salt and black pepper. Let it sit for about 15 minutes.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fish
Dredge the fish in rice flour, shaking off any excess. Carefully place the fish in hot oil and fry for about 8-10 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Green Mango Salad
While the fish is frying, julienne the green mango and carrot. Thinly slice the red onion. In a bowl, combine the mango, carrot, onion, cilantro, lime juice, fish sauce, sugar, and chili flakes. Toss well to combine.

Serve
Place the fried red snapper on a serving platter and top generously with the green mango salad. Serve immediately.
