Prepare the Duck
Season the duck breasts with salt and black pepper. Heat vegetable oil in a pan over medium-high heat and place the duck breasts skin-side down. Cook until the skin is crispy and golden brown, about 6-8 minutes. Flip and cook for another 3-4 minutes. Remove from the pan, cover, and let rest.

Make the Curry Sauce
In the same pan, add the red curry paste and cook for 1-2 minutes until fragrant. Pour in the coconut milk and stir to combine. Bring to a simmer.

Add Vegetables and Pineapple
Chop the red bell pepper into strips and add it to the curry sauce along with the pineapple chunks. Simmer for another 5 minutes until the vegetables are tender.

Finish with Basil and Tomatoes
Stir in the fresh basil leaves and cherry tomatoes. Simmer for an additional 2 minutes.

Serve
Slice the duck breasts and serve them over the tropical curry sauce. Enjoy!
