    Cook the Filling

    In a skillet, heat vegetable oil over medium heat. Add onions and sauté until translucent.

    Add the diced chicken and cook until no longer pink. Stir in potatoes, curry powder, salt, and pepper, then add water. Cover and simmer until potatoes are tender, about 15 minutes. Remove from heat and let cool.

    Make the Pastry

    Roll out puff pastry sheets on a lightly floured surface. Cut into 4 equal squares.

    Assemble the Curry Puffs

    Place a spoonful of the filling in the center of each pastry square. Fold the pastry over to create a triangle, sealing the edges with a fork.

    Bake

    Preheat the oven to 200°C (400°F). Place the curry puffs on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
