    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash and scrub the Russet potatoes thoroughly. Pat them dry with a paper towel.

    Bake the Potatoes

    Place the potatoes on a baking sheet and bake in the preheated oven for about 45-60 minutes or until fork-tender.

    Cool and Cut

    Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

    Season the Skins

    Brush the insides of the potato skins with olive oil, then sprinkle with salt and black pepper.

Assembling the Skins

    Add Cheese and Bacon

    Sprinkle shredded cheddar cheese and crumbled bacon generously into each potato skin.

    Bake Again

    Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Finishing Touches

    Garnish

    Remove from the oven and top with sliced green onions.
