Preheat the Oven
Preheat your oven to 400°F (200°C).

Bake the Potatoes
Place the potatoes on a baking sheet and bake in the preheated oven for about 45-60 minutes or until fork-tender.

Cool and Cut
Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

Assembling the Skins

Add Cheese and Bacon
Sprinkle shredded cheddar cheese and crumbled bacon generously into each potato skin.

Bake Again
Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and top with sliced green onions.
