Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool.
Filling

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and beat until well combined.

Add Remaining Ingredients
Add the sour cream, vanilla extract, and eggs (one at a time) to the cream cheese mixture. Beat until fully incorporated. Finally, sift in the all-purpose flour and mix until just combined.

Bake the Cheesecake
Pour the filling into the cooled crust, smoothing it out with a spatula. Bake in the oven at 325°F (160°C) for 60-70 minutes, until the edges are set and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for 1 hour.

Chill
Remove the cheesecake from the oven and allow it to cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.
Strawberry Sauce

Prepare the Sauce
In a medium saucepan, combine the sliced strawberries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally, until the strawberries have softened and the mixture has thickened slightly.

Cool the Sauce
Remove from heat and let the sauce cool. If desired, you can blend the sauce for a smoother consistency.
Serving

Serve the Cheesecake
Once the cheesecake is chilled, carefully remove it from the springform pan. Slice and serve with the prepared strawberry sauce drizzled on top.
