Preparation of Mozzarella Moons

Prepare the Cheese
Cut the mozzarella cheese into thick slices or moons, about 1 cm thick.

Set Up Breading Station
In three separate bowls, place the flour, beaten eggs, and a mixture of breadcrumbs and grated Parmesan cheese mixed with salt and black pepper.

Bread the Cheese
Coat each mozzarella slice first in flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture. Ensure each slice is evenly coated.

Fry the Cheese
Heat the oil in a deep frying pan over medium heat. Once hot, gently add the breaded mozzarella slices in batches, frying until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

Add Tomatoes and Seasoning
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer, reduce heat to low, and let cook for about 15 minutes, stirring occasionally.

Tear the fresh basil leaves and stir into the sauce just before serving.
