Method
Fish Preparation
- 1
Prepare the Batter
In a large bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper.
- 2
Add Liquid
Slowly pour in the beer or sparkling water while whisking until the batter is smooth and free of lumps.
- 3
Heat Oil
In a large deep frying pan or pot, heat oil over medium-high heat until it reaches 350°F (175°C).
- 4
Batter the Cod
Dip each cod fillet into the batter, allowing excess to drip off.
- 5
Fry the Cod
Carefully place the batter-coated fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and cooked through.
- 6
Drain and Keep Warm
Remove the fish from the oil and place on a paper towel-lined plate to drain excess oil. Keep warm in a low oven until all fillets are cooked.
Fries Preparation
- 7
Prep the Potatoes
Peel and cut the potatoes into thick strips.
- 8
Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
- 9
Heat Oil for Frying
In another pot or deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C).
- 10
Fry the Potatoes
Drain the soaked potatoes, pat them dry, and fry in batches for about 5-7 minutes until golden brown and crispy.
- 11
Season the Fries
Remove fries from the oil, drain on paper towels, and sprinkle with salt to taste.
Tartar Sauce Preparation
- 12
Combine Ingredients
In a small bowl, mix together mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill.
- 13
Season the Sauce
Add salt to taste and stir well until combined.
