Cake Directions

- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the semisweet chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.
- 3
Whisk Eggs and Sugar
In another mixing bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and thick, about 3 minutes.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously. Add the vanilla extract and a pinch of salt, and mix until well combined.
- 5
Add Flour
Sift the all-purpose flour into the chocolate mixture and gently fold it in until just combined. Be careful not to overmix.
- 6
Prepare Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
- 7
Bake
Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.
- 8
Cool and Serve
Let the cakes cool for 1 minute, then run a knife around the edges and carefully invert onto plates. Serve immediately with scoops of vanilla ice cream and fresh berries, if desired.
