    Prepare the Ingredients

    Dice the lup cheong, carrot, and chop the green onions. Make sure the rice is cooked and cooled, ideally using day-old rice.

    Cook the Lup Cheong

    Heat the cooking oil in a large skillet or wok over medium heat. Add the diced lup cheong and cook until they start to brown and release their oils.

    Add the Vegetables

    Add the diced carrots and green peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender.

    Add the Rice

    Add the cooked rice to the skillet. Stir well to combine with the sausage and vegetables.

    Season the Rice

    Pour the soy sauce and sesame oil over the rice mixture. Season with salt and pepper to taste. Stir-fry for another 3-5 minutes until everything is heated through.

    Prepare the Fried Egg (Optional)

    In a separate pan, heat a little oil and fry the eggs sunny-side up or to your preference. Season with salt and pepper.

    Serve

    Serve the lup cheong fried rice hot, with the optional fried egg on top if desired.
