Method

Directions

  1. 1

    Prepare the Tofu

Cube the firm tofu into bite-sized pieces and blanch them in boiling water for 2-3 minutes. Drain and set aside.

  2. 2

    Cook the Beef

In a large skillet or wok, heat vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula.

  3. 3

    Add Aromatics

Add minced garlic and ginger to the skillet and sauté for 1-2 minutes until fragrant.

  4. 4

    Incorporate Seasonings

Stir in the doubanjiang, soy sauce, and Shaoxing wine. Mix well to combine with the beef and cook for another 2 minutes.

  5. 5

    Add Broth and Tofu

Pour in the chicken broth and bring the mixture to a simmer. Gently fold in the blanched tofu cubes.

  6. 6

    Thicken the Sauce

In a small bowl, mix cornstarch with a bit of water to create a slurry. Slowly pour this into the skillet while stirring until the sauce thickens.

  7. 7

    Season and Garnish

Season with salt and pepper to taste. If using, add Sichuan peppercorns. Serve hot, garnished with chopped green onions.
