Method

Preparation

  1. 1

Begin by slicing the Ahi tuna into rectangular blocks, about 1 inch thick.

  2. 2

In a bowl, mix together the soy sauce, sesame oil, rice vinegar, and wasabi to create a marinade.

  3. 3

Place the sliced tuna in the marinade, ensuring it is fully submerged. Allow it to marinate in the refrigerator for at least 30 minutes.

Cucumber Preparation

  1. 4

While the tuna is marinating, take the large cucumber and using a vegetable peeler or mandoline, shave it into thin ribbons.

  2. 5

Chop the scallions finely and set aside for garnish.

Cooking and Assembly

  1. 6

Heat a skillet over high heat. Once hot, quickly sear the marinated tuna for about 30 seconds on each side, just enough to create a crust while keeping the center rare.

  2. 7

Remove the tuna from the skillet and let it rest for a couple of minutes before slicing it thinly against the grain.

  3. 8

On a serving plate, arrange the shaved cucumber ribbons artistically. Layer the sliced tuna on top.

  4. 9

Sprinkle the chopped scallions and sesame seeds over the top for garnish.

  5. 10

Drizzle a small amount of the marinade over the assembled dish for added flavor.
