Preparation of Beef Tartare

Prepare the Beef
Finely chop the Prime Tenderloin using a sharp knife. Ensure the meat is chilled for easier handling.

Combine Ingredients
In a mixing bowl, combine the chopped Prime Tenderloin with the Chimichurri Sauce. Mix well to ensure even distribution.

Plating
Use a ring mold to form the beef tartare into a round shape on a serving plate. Carefully remove the mold.

Add Egg Yolk
Create a small indentation in the center of the tartare and gently place an egg yolk on top.

Garnish with Microgreens
Sprinkle the microgreens around the tartare for a fresh garnish.
Preparation of Asiago Crostini

Preheat Oven
Preheat your oven to 180°C (350°F).

Slice Baguette
Slice the baguette into 1 cm thick rounds.

Add Cheese
Grate the Asiago cheese and sprinkle it generously over the oiled baguette slices.

Bake Crostini
Place the baguette slices on a baking sheet and bake in the oven for about 10-12 minutes, or until golden brown and crispy.

Remove from the oven and let cool slightly before serving alongside the beef tartare.
