Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Whisk Wet Ingredients

In another bowl, whisk the eggs until frothy, then add the olive oil, milk, and vanilla extract. Mix until smooth.

  4. 4

    Combine Mixtures

Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cake

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Topping Preparation

  1. 7

    Prepare the Strawberries

While the cake cools, wash and hull the fresh strawberries. Slice them and toss with 1 tablespoon of granulated sugar. Let them sit for about 10 minutes to release their juices.

  2. 8

    Whip the Cream

In a mixing bowl, combine the heavy cream and powdered sugar. Using an electric mixer, whip until soft peaks form.

  3. 9

    Assemble the Cake

Once the cake is completely cool, place it on a serving plate. Top it with the sugared strawberries and dollops of whipped cream.
