Preparation of Ingredients

    Prepare the Shrimp

    In a large bowl, combine the shrimp with salt and black pepper. Set aside to marinate for 15 minutes.

    Make the Coating

    In another bowl, mix the flour and cornstarch. In a separate bowl, whisk together the eggs and water until well combined.

Cooking the Shrimp

    Coat the Shrimp

    Dip each marinated shrimp into the egg mixture, then roll in the flour-cornstarch mixture until fully coated.

    Heat Oil

    In a large skillet, heat vegetable oil over medium-high heat until shimmering.

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches. Fry until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Making Toasted Garlic and Chili Oil

    Prepare Toasted Garlic

    In a small skillet, heat olive oil over medium heat. Add minced garlic and sauté until golden brown. Remove from heat and set aside.

    In another small saucepan, heat olive oil over low heat. Add red pepper flakes and simmer for about 5 minutes. Remove from heat and let cool.

Making the Sauces

    Prepare Salsa Verde

    In a bowl, combine chopped parsley, minced garlic, rinsed capers, red wine vinegar, and olive oil. Season with salt and black pepper. Mix until well combined.

    Make Aioli

    In a separate bowl, mix mayonnaise with minced garlic, lemon juice, salt, and black pepper until smooth and creamy.

Serving

    Plate the Dish

    Arrange the crispy shrimp on a serving plate. Drizzle with toasted garlic and chili oil. Serve with salsa verde and aioli on the side.
