Preparation of Ingredients

Prepare the Shrimp
In a large bowl, combine the shrimp with salt and black pepper. Set aside to marinate for 15 minutes.

Make the Coating
In another bowl, mix the flour and cornstarch. In a separate bowl, whisk together the eggs and water until well combined.
Cooking the Shrimp

Coat the Shrimp
Dip each marinated shrimp into the egg mixture, then roll in the flour-cornstarch mixture until fully coated.

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until shimmering.

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Make Chili Oil
In another small saucepan, heat olive oil over low heat. Add red pepper flakes and simmer for about 5 minutes. Remove from heat and let cool.
Making the Sauces

Prepare Salsa Verde
In a bowl, combine chopped parsley, minced garlic, rinsed capers, red wine vinegar, and olive oil. Season with salt and black pepper. Mix until well combined.

In a separate bowl, mix mayonnaise with minced garlic, lemon juice, salt, and black pepper until smooth and creamy.
