Method
Preparing the Fish

Season the Cobia
Pat the cobia fillet dry with paper towels. Coat both sides with blackening spice evenly.

Making Carolina Gold Crab Rice

Cook the Rice
Add Carolina Gold rice to the saucepan and toast for 1-2 minutes. Pour in water or seafood stock, add salt and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.

Add Crab Meat
Once the rice is cooked, gently fold in the crab meat. Remove from heat and keep covered until ready to serve.
Preparing Vegetables

Sauté Broccolini
In a skillet, add 1 tablespoon of olive oil over medium heat. Add broccolini and sauté for 4-5 minutes until tender-crisp. Season with salt and pepper, then remove from the skillet.

Cook Collard Greens
In the same skillet, add another tablespoon of olive oil. Add chopped collard greens and sauté for 5-7 minutes until wilted. Season with salt and pepper, then remove from heat.
Making Mint Chimichurri

Combine Ingredients
In a bowl, mix together chopped mint, parsley, minced garlic, red wine vinegar, olive oil, salt, and pepper. Stir well to combine and let sit for at least 10 minutes for flavors to meld.
