    Marinate the Chicken

    In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, black pepper, and salt. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare for Frying

    In a large dish, add the all-purpose flour. Remove the chicken from the marinade, letting the excess drip off, then dredge each piece in the flour until fully coated. Shake off any excess flour.

    Heat the Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles, it's ready.

    Fry the Chicken

    Carefully add the coated chicken pieces to the hot oil, frying in batches to avoid overcrowding. Fry for about 12-15 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown. Remove and place on paper towels to drain.

Mac & Cheese

    Cook the Pasta

    In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually add the milk, whisking continuously until smooth and thickened. Stir in the cheddar cheese, salt, and black pepper until the cheese is melted and the sauce is creamy.

    Combine Pasta and Sauce

    Add the drained macaroni to the cheese sauce, stirring to coat evenly. If using, sprinkle breadcrumbs on top.

    Bake (Optional)

    If you prefer a baked mac & cheese, transfer the mixture to a greased baking dish and bake at 350°F (175°C) for 20-25 minutes, or until bubbly and golden on top.

Collard Greens

    Cook the Aromatics

    In a large pot, sauté the chopped onion and minced garlic over medium heat until softened, about 5 minutes.

    Add the Smoked Turkey

    Add the smoked turkey leg and chicken broth to the pot. Bring to a boil, then reduce to a simmer.

    Simmer the Collard Greens

    Add the chopped collard greens to the pot, along with the red pepper flakes, salt, and black pepper. Cover and simmer for about 30-40 minutes, or until the greens are tender.

    Remove the Turkey

    Once cooked, remove the smoked turkey leg, shred the meat, and return it to the pot. Stir to combine and serve warm.
