    Prepare the Crust

    In a large bowl, combine all-purpose flour and granulated sugar. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until the mixture forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Caramelize the Peaches

    In a large skillet over medium heat, melt the 2 tablespoons of unsalted butter. Add the sliced peaches, brown sugar, cinnamon, and vanilla extract. Cook for about 5-7 minutes until the peaches are tender and caramelized. Remove from heat and let cool slightly.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Assemble the Pie

    Roll out the chilled crust on a floured surface to fit your pie dish. Place the crust in the pie dish, fill it with the caramelized peaches, and drizzle with caramel sauce.

    Bake the pie in the preheated oven for 25-30 minutes or until the crust is golden brown. Remove from the oven and let it cool for a few minutes.
