Prepare the Seafood

Marinate the Seafood
Soak the shrimp or catfish fillets in buttermilk for at least 30 minutes.

Coat the Seafood
In a mixing bowl, combine flour, cornmeal, and cajun seasoning. Remove seafood from buttermilk and dredge in the flour mixture until well coated.
Fry the Seafood

Heat the Oil
In a large frying pan, heat oil over medium-high heat until hot.

Carefully add the coated seafood to the hot oil and fry for about 3-5 minutes until golden brown. Drain on paper towels.
Prepare the Seafood Sauce

In a bowl, combine mayonnaise, ketchup, hot sauce, and lemon juice. Mix well and set aside.
Prepare the Fries

Prepare frozen french fries according to package instructions. Once cooked, sprinkle with seasoned salt to taste.
Assemble the Po Boy

Slice the Cuban bread rolls and layer with lettuce, tomato slices, pickles, and fried seafood. Drizzle with seafood sauce.
