Prepare the Collard Greens Filling
In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Braised Collard Greens
Stir in the collard greens, vegetable broth, cumin, salt, and black pepper. Cover and simmer for 20 minutes, or until the collard greens are tender. Remove from heat, let cool slightly, and then chop coarsely.

Assemble the Empanadas
Preheat your oven to 375°F (190°C). Take an empanada pastry disc and place about 2 tablespoons of the collard greens filling in the center. Fold the disc in half and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

Bake the Empanadas
Place the filled empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.

Serve
Remove from the oven and let cool slightly. Serve warm with a side of pepper jam for dipping.
