    Prepare the green tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle salt and black pepper on both sides and let them sit for about 10 minutes to draw out excess moisture.

    In one bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, add the cornmeal.

    Bread the tomatoes

    Dredge each tomato slice in flour, then dip in the beaten eggs, and finally coat in cornmeal. Ensure each slice is evenly coated.
