    Prepare the Collards

    In a large pot, fill it with water and bring to a boil. Add collard greens and simmer for about 45 minutes until tender. Season with salt and pepper to taste.

    Make Gouda Grits

    In a saucepan, boil 4 cups of water. Add grits and stir. Cook for about 20 minutes. Stir in shredded Gouda cheese until melted and creamy.

    Prepare the Catfish

    In a shallow bowl, combine cornmeal and flour. In another bowl, beat eggs and milk. Dredge catfish in the egg mixture, then coat in the cornmeal mixture.

    Fry the Catfish

    Heat vegetable oil in a skillet over medium-high heat. Fry catfish for about 4-5 minutes on each side until golden brown. Remove and place on paper towels to drain.

    Make Creole Pan Sauce

    In the same skillet, melt butter and sauté onion, bell pepper, celery, and garlic until softened. Add Cajun seasoning, diced tomatoes, and chicken broth. Simmer for about 10 minutes.

    Fry the Okra

    In a separate skillet, heat oil and fry sliced okra until crispy. Drain on paper towels.

    Serve

    On a plate, serve catfish topped with Creole pan sauce, alongside gouda grits, braised collards, and fried okra.
