    Prepare the Gumbo

    In a slow cooker, combine the chicken sausage, diced tomatoes, okra, collard greens, celery, onion, bell pepper, black-eyed peas, and seasonings. Pour in the water or chicken broth.

    Cover and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender and the flavors have melded.

    Add Seafood

    About 30 minutes before serving, add the crab meat and shrimp to the slow cooker. Stir to combine.

    Cook the Catfish

    While the gumbo is finishing, heat oil in a skillet over medium-high heat. Season catfish fillets with salt, black pepper, and cajun seasoning. Fry catfish for 3-4 minutes per side until golden brown and cooked through.

    Serve the gumbo over seasoned rice and top with crispy fried catfish.
