    Prepare the Batter

    In a mixing bowl, combine the flour, baking powder, salt, and sugar. In another bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and mix until just combined.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon strips until crispy. Remove and let drain on paper towels.

    Make the Flapjacks

    In the same skillet, melt 1 tablespoon of butter over medium heat. Pour 1/4 cup of the batter for each flapjack onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with the remaining batter, adding more butter as needed.

    Scramble the Eggs

    In a bowl, whisk together 2 eggs (or more for more servings) and season with salt and pepper. Melt 1 tablespoon of butter in the skillet and pour in the eggs. Stir gently until scrambled and cooked through.

    On a plate, stack two flapjacks, add the scrambled eggs, and top with crispy bacon. Serve hot.
