Prepare the Catfish Nuggets
Cut the catfish fillets into bite-sized nuggets. In a bowl, mix together cornmeal, flour, salt, black pepper, and cayenne pepper. Dip the catfish nuggets into buttermilk, then dredge them in the cornmeal mixture.

Fry the Catfish Nuggets
Heat vegetable oil in a deep skillet over medium-high heat. Once the oil is hot, carefully add the catfish nuggets and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Prepare the Shrimp
In a separate bowl, mix flour with salt and pepper. Dredge the shrimp in the seasoned flour. In another bowl, whisk together eggs and buttermilk.

Fry the Shrimp
Dip the floured shrimp into the egg mixture, then back into the flour for a double coating. Fry in the hot oil until crispy and golden, about 3-4 minutes. Drain on paper towels.

Preheat the oven to 400°F (200°C). In a bowl, combine cornmeal, flour, baking powder, salt, and sugar. In another bowl, whisk together eggs, buttermilk, and melted butter. Mix the wet ingredients into the dry until just combined. Pour the batter into a greased muffin tin and bake for 15-20 minutes until golden.
