Prepare the Collard Greens
Rinse the collard greens under cold water to remove any dirt. Remove the tough stems and chop the leaves into bite-sized pieces.

Add the Broth and Turkey
If using, add the smoked turkey leg to the pot along with the chicken broth (or water). Bring to a simmer.

Cook the Collard Greens
Add the chopped collard greens to the pot. Stir to combine with the broth and aromatics. Season with salt, black pepper, red pepper flakes, and apple cider vinegar. Cover and simmer for about 45 minutes, or until the greens are tender.

Serve
Remove the turkey leg if used, shred the meat if desired, and return it to the pot. Adjust seasoning as necessary before serving warm.
