Preparation
Prepare the Bread Mixture
In a large mixing bowl, whisk together pumpkin puree, milk, heavy cream, eggs, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
Combine with Bread
Add the cubed bread to the pumpkin mixture and gently fold until the bread is thoroughly coated. Let it sit for about 15 minutes to allow the bread to soak up the custard.
Bake the Pudding
Preheat the oven to 350°F (175°C). Grease a baking dish (9x13 inches or similar) and pour the bread mixture into the dish. Bake for 45-50 minutes or until the top is golden and a knife inserted in the center comes out clean.
Prepare Toppings
While the pudding is baking, prepare the caramelized apples and pecan caramel sauce, and have the French vanilla ice cream and whipped cream ready for serving.
Serve
Once the bread pudding is done, allow it to cool slightly before serving. Serve warm with a scoop of French vanilla ice cream, a dollop of whipped cream, caramelized apples, and a drizzle of pecan caramel sauce.
