Prepare Dumpling Mixture

Mix Ingredients
In a large mixing bowl, combine ricotta cheese, corn kernels, huitlacoche, minced garlic, breadcrumbs, grated Parmigiano Reggiano, chopped chives, salt, and black pepper. Mix until well combined.

Form Dumplings
Using your hands, form the mixture into small dumplings, about the size of a golf ball. Place them on a parchment-lined tray.
Cook Dumplings

Boil Water
In a large pot, bring 8 cups of water to a boil. Add salt to taste.

Cook Dumplings
Once the water is boiling, carefully add the dumplings. Cook for 4-5 minutes or until they float to the top. Remove with a slotted spoon and drain.

Plate and Enjoy
Serve the dumplings warm, garnished with extra chives and a sprinkle of Parmigiano Reggiano if desired.
