Prep the Jalapenos
Slice the jalapeno peppers in half lengthwise and remove the seeds and membranes to reduce heat.

Make the Filling
In a mixing bowl, combine the cream cheese and cooked brisket. Mix until well combined.

Stuff the Jalapenos
Using a spoon, fill each jalapeno half with the cream cheese and brisket mixture.

Wrap with Bacon
Take a slice of bacon and wrap it around each stuffed jalapeno, securing it with a toothpick if necessary.

Preheat the Smoker
Preheat your smoker to 225°F (107°C) for indirect cooking.

Smoke the Texas Twinkies
Place the wrapped jalapenos in the smoker and cook for about 2 hours, or until the bacon is crispy and the jalapenos are tender.
