Cooking Instructions

  1. 1

    Prep the Jalapenos

Slice the jalapeno peppers in half lengthwise and remove the seeds and membranes to reduce heat.

  2. 2

    Make the Filling

In a mixing bowl, combine the cream cheese and cooked brisket. Mix until well combined.

  3. 3

    Stuff the Jalapenos

Using a spoon, fill each jalapeno half with the cream cheese and brisket mixture.

  4. 4

    Wrap with Bacon

Take a slice of bacon and wrap it around each stuffed jalapeno, securing it with a toothpick if necessary.

  5. 5

    Preheat the Smoker

Preheat your smoker to 225°F (107°C) for indirect cooking.

  6. 6

    Smoke the Texas Twinkies

Place the wrapped jalapenos in the smoker and cook for about 2 hours, or until the bacon is crispy and the jalapenos are tender.

  7. 7

    Add BBQ Sauce

In the last 10 minutes of cooking, brush your house BBQ sauce over the Texas Twinkies for added flavor.

  8. 8

    Serve

Remove from the smoker, let cool slightly, and serve warm.
