Prepare the Ribs
Remove the membrane from the back of the St Louis cut pork ribs. Pat the ribs dry with paper towels.

Make the Dry Rub
In a bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and brown sugar to create a dry rub.

Season the Ribs
Generously apply the dry rub to both sides of the ribs, ensuring they are evenly coated. Let them sit for at least 30 minutes to absorb the flavors.

Preheat the Grill
Preheat your grill to medium heat (about 300°F/150°C).

Check for Doneness
The ribs are done when they are tender and the meat pulls away from the bones easily. You can use a meat thermometer to check that the internal temperature has reached 190°F (88°C).
