Prepare the Pork Belly

Preheat your smoker to 225°F (107°C). Cut the pork belly into 1-inch cubes and place them in a large bowl.

Make the Rub

In a separate bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the pork belly cubes until they are well coated.

Smoke the Pork Belly

Place the pork belly cubes in the smoker and add wood chips for smoke flavor. Smoke for about 3 hours or until they have a nice bark and are tender.

Sauce and Finish

Remove the pork belly from the smoker and toss them in a bowl with BBQ sauce and apple cider vinegar. Return them to the smoker for an additional hour, allowing the sauce to caramelize.
