1. Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes thoroughly. Prick each potato several times with a fork. Rub with a little oil and sprinkle with salt.
2. Bake the Potatoes
Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the skins are crispy and a fork easily pierces the flesh.
3. Prepare the Toppings
While the potatoes are baking, warm the smoked brisket in a saucepan over medium heat. If using pulled pork, warm it as well.
4. Assemble the Loaded Potatoes
Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and gently push the ends to open them up. Add a tablespoon of butter to each potato.
5. Add Toppings
Spoon in the warm brisket (or pulled pork) into each potato. Top with sour cream, shredded cheddar cheese, and chopped green onions. Finally, sprinkle with BBQ rub to taste.
6. Serve
