Cooking the Curry

Prepare the Ingredients

Chop the bell peppers, onion, and scallions. If using tofu, press and cube it; if using chicken, cut it into bite-sized pieces.

Cook the Base

In a large pot or skillet, heat the vegetable oil over medium heat. Add the green curry paste and sauté for 1-2 minutes until fragrant.

Add Coconut Milk

Pour in the coconut milk and stir well to combine. Bring to a gentle simmer.

Add Vegetables and Protein

Add the sliced bell peppers, onion, scallions, and cubed tofu or chicken. Stir to combine.

Simmer

Add the vegetable broth or water, and fish sauce if using. Simmer for 15 minutes or until the vegetables are tender and the protein is cooked through.

Finish with Basil

Stir in the fresh basil leaves just before serving.

Cooking the Rice

Cook Jasmine Rice

In a pot, combine 1 cup jasmine rice with 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
