Prepare the Marinade
Soak Chiles
Remove stems and seeds from guajillo and ancho chiles. Soak them in hot water for about 15 minutes until softened.
Marinate Beef
In a large bowl, coat the chuck roast with the marinade. Cover and refrigerate for at least 2 hours or overnight for best flavor.
Cook the Beef
Braise the Beef
Preheat the oven to 300°F (150°C). In a large Dutch oven, place the marinated beef. Add the remaining beef broth, bay leaves, and cinnamon stick. Cover and cook for 3-4 hours until tender.
Assemble Tacos
Warm Tortillas
In a skillet, warm the corn tortillas over medium heat until pliable.
Fill Tacos
Add shredded beef and cheese to each tortilla. Fold and serve with chopped onions, cilantro, and lime wedges.
Prepare Dipping Broth
Strain Broth
Strain the cooking liquid from the beef pot to create a dipping broth. Adjust seasoning with salt and pepper as needed.
