Prepare the Ingredients

Start by washing and preparing all the vegetables. Halve the cherry tomatoes, trim the green beans, and wash the baby potatoes.

Cook the Potatoes

In a pot, bring water to a boil and add the baby potatoes. Cook for about 15 minutes or until fork-tender. Drain and set aside.

Blanch the Green Beans

In the same pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop cooking.

Sear the Tuna

Heat a skillet over medium-high heat. Season the tuna steaks with salt and pepper. Add a drizzle of olive oil to the skillet and sear the tuna for about 2-3 minutes on each side for medium-rare, or cook to your desired doneness. Remove from heat and let rest.

Prepare the Vinaigrette

In a small bowl, whisk together the juice of one lemon, 2 tablespoons of honey, salt, and pepper to taste. Add a drizzle of olive oil and mix well.

Assemble the Salad

On a large platter, arrange the mixed greens, cherry tomatoes, kalamata olives, green beans, and baby potatoes. Slice the seared tuna and place it on top. Drizzle with the lemon honey vinaigrette and garnish with mixed herbs.
