Method

Preparing the Proteins

  1. 1

    Chicken Preparation

Season the chicken breasts with salt, pepper, and your choice of taco seasoning. Grill or sauté in a pan over medium heat for about 6-7 minutes on each side until fully cooked. Let rest for 5 minutes before slicing into strips.

  2. 2

    Steak Preparation

Marinate the steak in olive oil, lime juice, salt, pepper, and cumin for at least 30 minutes. Grill or pan-sear the steak for 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing against the grain.

  3. 3

    Pork Preparation

Rub the pork shoulder with salt, pepper, and your favorite BBQ seasoning. Slow cook in a crockpot or oven at 150°C (300°F) for about 6-8 hours until tender. Shred the pork using two forks and set aside.

Making the Toppings

  1. 4

    Guacamole Preparation

In a bowl, mash ripe avocados and mix with lime juice, diced tomatoes, chopped cilantro, minced garlic, and salt to taste. Adjust seasoning as necessary.

  2. 5

    Pico de Gallo Preparation

Combine diced tomatoes, chopped onions, minced jalapeños, chopped cilantro, lime juice, and salt in a bowl. Mix well and let it sit for 15 minutes to meld flavors.

  3. 6

    Salsa Preparation

Blend canned tomatoes, diced onions, minced garlic, jalapeños, and cilantro in a food processor. Season with salt and lime juice to taste. Adjust consistency by adding water if necessary.

  4. 7

    Pickled Red Onions Preparation

Slice red onions thinly and place in a jar. In a saucepan, heat equal parts vinegar and water with sugar and salt until dissolved. Pour over the onions and let them sit for at least 30 minutes before serving.

Assembling the Tacos

  1. 8

    Warm the Tortillas

Heat the tortillas on a skillet for about 30 seconds on each side until warm and pliable.

  2. 9

    Build Your Taco

On a warmed tortilla, layer your choice of protein (chicken, steak, or pork), followed by guacamole, pico de gallo, salsa, pickled red onions, shredded cheese, and lettuce. Serve immediately.
