Mashing
1. Heat Water
In a large pot, heat 5 gallons of filtered water to about 165°F (74°C).
2. Mash the Grains
Add 10 cups of pale malt and 1 cup of caramel malt to the hot water. Stir well and let it steep for 60 minutes, maintaining the temperature around 150-155°F (65-68°C).
3. Sparge
After mashing, sparge the grains with hot water to collect the wort in the pot.
Boiling
4. Boil the Wort
Bring the wort to a rolling boil. Once boiling, add 1 oz of bittering hops and boil for 60 minutes.
5. Add Aroma Hops
With 15 minutes left in the boil, add 1 oz of aroma hops for flavor.
Fermentation
6. Cool the Wort
After boiling, cool the wort quickly using a wort chiller or by placing the pot in an ice bath until it reaches about 70°F (21°C).
7. Transfer to Fermentation Vessel
Transfer the cooled wort into a sanitized fermentation vessel and add the packet of ale yeast.
8. Ferment
Seal the fermentation vessel with an airlock and let it ferment in a dark, cool place for about 1-2 weeks.
Bottling
9. Prepare Bottling
After fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water to create a priming solution.
10. Bottle the Beer
Add the priming solution to the bottom of a sanitized bottling bucket. Transfer the beer from the fermentation vessel to the bottling bucket, then bottle the beer into sanitized bottles.
11. Cap and Store
Cap the bottles and store them in a dark place at room temperature for 1-2 weeks to carbonate.
