Steak and Vegetables

    Marinate the Steak

    In a bowl, combine the flank steak with olive oil and fajita seasoning. Rub the seasoning into the meat and let it marinate for at least 30 minutes.

    Prepare the Vegetables

    Slice the bell pepper and red onion into thin strips. Set them aside.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Once hot, grill the marinated steak for about 5-6 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest.

    Sauté the Vegetables

    In the same pan, add a little more olive oil if needed, and sauté the sliced bell peppers and onions until they are tender and slightly charred, about 5-7 minutes. Remove from heat.

    Slice the Steak

    Once the steak has rested, slice it thinly against the grain.

Quesadilla Assembly

    Assemble the Quesadilla

    Heat a large skillet over medium heat. Place one tortilla in the skillet. On one half of the tortilla, layer shredded cheese, sliced steak, sautéed vegetables, pico de gallo, and more cheese on top.

    Cook the Quesadilla

    Fold the tortilla over to cover the filling. Cook for about 3-4 minutes on one side, or until golden and crispy. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted.

    Repeat

    Repeat the assembly and cooking process with the remaining tortillas and fillings.

Guacamole and Sour Cream

    Make the Guacamole

    In a bowl, mash the ripe avocados with lime juice and salt until smooth. Adjust seasoning to taste.

    Serve with Quesadillas

    Serve the quesadillas hot with a side of hand-smashed guacamole and sour cream.
