Steak Marinade

Marinate the Steak
In a bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Add the flank steak and coat it well. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare Chile Crema
In a small bowl, mix sour cream, chipotle peppers, lime juice, and salt until well combined. Set aside.
Chile Corn Salsa

Make Chile Corn Salsa
In a mixing bowl, combine corn, diced red bell pepper, diced red onion, cilantro, lime juice, and salt. Mix well and set aside.
Cilantro Lime Rice

Heat Black Beans
In a small saucepan, combine rinsed black beans, cumin, garlic powder, and salt. Heat over medium heat until warmed through, about 5-7 minutes.
Burrito Assembly

Assemble Burritos
Lay a large flour tortilla flat. Start with a scoop of cilantro lime rice, followed by black beans, grilled steak slices, a drizzle of chile crema, chile corn salsa, and a handful of tortilla strips. Wrap the tortilla tightly around the filling, folding in the sides as you roll. Repeat with remaining tortillas.

Serve
Serve the burritos warm, optionally with extra chile crema on the side.
