In a large mixing bowl, beat the unsalted butter, brown sugar, and granulated sugar together until the mixture is light and fluffy, about 2-3 minutes.

Add the large eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, cream of tartar, and salt.

Mix Dry Ingredients into Dough
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

Combine Cinnamon and Sugar
In a small bowl, mix together the granulated sugar and ground cinnamon until well combined.
Baking the Cookies

Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Place the coated dough balls onto the prepared baking sheet, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
