Mango Salsa

    Prep the Ingredients

    Peel and dice the ripe mango into small cubes, making sure to discard the pit. Dice the tomato, red onion, and jalapeno pepper (removing seeds for less heat, if desired). Chop the fresh cilantro finely.

    Mix the Salsa

    In a mixing bowl, combine the diced mango, tomato, red onion, jalapeno pepper, and cilantro. Add lime juice and salt. Gently toss all the ingredients together until evenly mixed.

    Chill the Salsa

    Cover the bowl with plastic wrap and let the salsa chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Tortilla Chips

    Prepare the Tortillas

    Cut each corn tortilla into 6 wedges to create chips.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a few tortilla wedges to the hot oil, making sure not to overcrowd the pan. Fry until they are golden and crispy, about 2-3 minutes, turning occasionally.

    Drain and Season

    Remove the chips from the oil using a slotted spoon and place them on paper towels to drain excess oil. Immediately sprinkle with salt while they are still hot.
