Cooking Rice

Rinse the Rice
Place the brown rice in a fine-mesh strainer and rinse it under cold running water for about 1-2 minutes to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed brown rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the water is absorbed.

Sauté the Garlic
While the rice is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the Tomatoes and Spices
Stir in the fire roasted diced tomatoes, smoked paprika, chipotle powder, salt, and black pepper. Allow the mixture to simmer for about 5-7 minutes, letting the flavors meld together.
