Chips Preparation

Prepare the Oil
In a deep frying pan, heat the soy oil over medium heat until it reaches approximately 350°F (175°C).

Fry the Tortillas
Cut the white corn tortillas into triangles (8 pieces per tortilla). Carefully place the tortilla triangles in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Season
Remove the fried chips from the oil using a slotted spoon and place them on paper towels to drain excess oil. While they are still hot, sprinkle with salt and drizzle with lime juice to taste.

Mix the Salsa
In a medium bowl, combine the diced tomatoes, onion, jalapeño, and cilantro. Add lime juice and salt. Mix well until all ingredients are evenly combined.

Taste and Adjust
Taste the salsa and adjust the seasoning with more salt or lime juice as needed. Let the salsa sit for at least 15 minutes to allow the flavors to meld.
